Homemade Chocolate Doughnuts
I was browsing through Pinterest yesterday (as I always am) and I came across this incredibly easy doughnut recipe. I got the recipe from Inside BruCrew Life blog. Jocelyn (from Inside BruCrew Life) said it was basically cake in the shape of a doughnut. I was really excited to make them! I got started on them kind of late yesterday. I started making them at 5:00 yesterday evening and then I had the great idea to naturally dye Easter eggs. I was afraid I wouldn't have enough time to finish both, so I picked dying eggs over my doughnuts. My amazing mother helped me finish baking the doughnuts while I moved onto my dying eggs project. (Thank you mom). This recipe is so easy to follow and so easy to make, and as a lovely result, they taste pretty good too!
Here is what you will need:
~1 & 1/2 teaspoon baking powder
~1 & 1/2 teaspoon baking soda
~1/2 teaspoon of salt
~1/2 cup unsweetened cocoa powder
~2 cups of unbleached (or regular all purpose) flour
~1/2 cup of butter, softened
~1/3 cup of brown sugar
~1/3 cup of sugar (pure cane sugar)
~2 teaspoons vanilla extract
~1 egg
~2/3 cup plain Greek yogurt
~2/3 cup brewed coffee, cooled
~Wilton cake doughnut pan
First, preheat your oven to 375 degrees, and grab your doughnut pan and spray it with cooking spray or swipe it with oil and set the pan aside.
If you don't already have coffee in your coffee pot, start making some now. Once it is done brewing, pour it in a mug and put it in the freezer until the coffee is needed. This took up a lot of my time yesterday, waiting for the coffee to cool, but I filled it with the egg project.
Next, in a medium mixing bowl, mix together the baking powder, baking soda, salt, cocoa powder, and flour. Mix gently because cocoa powder is very dusty and it will go everywhere if you are not careful. Set it aside once it is mixed together.
Get out a large mixing bowl and cream together the butter and sugars, using a hand mixer or stand mixer.
Once creamed together, add in the egg, yogurt and vanilla extract.
I used ZOI Greek yogurt.
Once the the butter and yogurt mixture is all mixed thoroughly, alternately add the flour and coffee until it is all mixed together and keep using the stand mixer or hand mixer for this.
Mix thoroughly and voila! you have your doughnut batter!
Now, you can use a spoon or frosting bag to squeeze the batter into the doughnut pan, I used my batter pen. I love this thing. You pour the batter into it, and you squeeze it out into the pan. It's no mess and easy-peasy!
My Grandma Biggs gave this to me and I LOVE it.
If you have a batter pen yourself, all you need is one squeeze around in the doughnut divots. These plump up when they bake, so if you fill it up too much, it will fatten up really high.
Once the pan is all filled up, put it in the oven for 10 minutes.
While they are baking, it is time to make the glaze. The glaze is from a different site, not the same blog I got the doughnut recipe from.
The glaze is super easy!
Here is what you will need:
~1 cup powdered sugar
~1 cup unsweetened cocoa powder
~1/4 teaspoon salt
~2 tablespoons of sugar
~3/4 cup milk
In a medium mixing bowl, add in the sugars, cocoa powder and salt, then add in the milk. Whisk together thoroughly.
Before you dip the doughnuts in the glaze, make sure they are cooled. I made the doughnuts yesterday evening and I made the glaze this morning, so I let them cool off quite a bit. I would at least an hour and a half before dipping the doughnuts in the glaze.
After you do dip the doughnuts in the glaze, decorate with sprinkles and such if you'd like. I love sprinkles on my doughnuts.
