Healthy Taco Dip
I absolutely love sour cream and salsa with any Mexican food that I eat. A negative to adding sour cream and salsa to everything is the extra calories and fat that come with it. Here is a simpler and healthier solution to sour cream. This tasty recipe can be customized to your taste preferences, it is perfect for a picnic, or an appetizer.
I have heard this little trick before of substituting sour cream, but I have never actually tried it. Now that I have tried it, I am going to try and substitute sour cream for plain Greek yogurt with all of the Mexican dishes that we have from now on. Sour cream is so fattening, even the light sour cream! I am going to try and stick with plain Greek yogurt instead. It tastes exactly like sour cream, but it so much healthier.
Here is what you will need for Healthy Taco Dip:
~plain Greek yogurt- 1 cup to 2 cups. Depends on how much you need to make.
~1/2 cup shredded lettuce
~1/2 cup diced tomatoes
~1 half avocado
~tortilla chips
~1/3 cup quartered black olives
~1/2 teaspoon taco seasoning
Begin by dicing up the tomatoes, cutting the avocado, quartering the black olives, and shredding/tearing up the lettuce. Grab a bowl, scoop the Green yogurt in at the bottom, add in the taco seasoning and stir in with the Greek yogurt. Add in the lettuce, tomatoes, olives, chips, and scoop out the avocado on top of the chips. You can add anything you would like in your taco dip, such as green onions, or black beans, or chilies. Anything really. Enjoy!
I ate my taco dip like nachos. Scooping up everything onto the chips and munching. It was delicious! I normally don't feel guilty about what I eat, but I especially did not feel guilty eating this. I could not tell the difference in the plain Greek yogurt compared to sour cream. It tasted wonderful!
Next time I make this, I will add in green onions, that is another ingredient I always try to include when eating Mexican food. I like the taste of green onions more than the taste of white or red onions. I made this last Wednesday on my birthday for a little appetizer before my dad made tacos. Oh it was so delicious. I am so excited to make this again.
