Kale, Quinoa, & Salmon Salad

Being motivated to eat vegetables and fruit is tough for me, eating raw fruits and vegetables is not appealing, there are just way too many food distractions out there. I am trying to eat healthier, and the easiest way for me to include vegetables in my diet is by eating them in a salad. I found photos of pretty, colorful salads on Pinterests, and they inspired me to make pretty salads with deep colored foods. For a while, I was eating unhealthy foods because they were fast to prepare, but salads can be just as fast to prepare, healthy foods can be just as fast to prepare, and I want to share with you this super easy salad that is absolutely delicious. 
I like to sometimes have meat in my salads, so I decided to choose a healthier meat for this salad. I chose pink salmon. Everybody knows how to toss together a salad, so I am not going to go into detail about to put this salad together. 
Here is what I used: 
-kale
-beets
-salmon
-quinoa
-sunflower seeds
-tomatoes
-avovados
-olive oil
-balsamic vinegar 
-tangy mustard

So, I tossed together all of the ingredients, excluding the olive oil, balsamic vinegar, and the tangy mustard; those three ingredients will be used for the vinaigrette. I tore the kale for the salad, I peeled the beets thin with a peeler, and I sprinkled some half cooked quinoa on the salad. I threw in chopped tomatoes, cut up avovado and tossed it on the salad, along with a sprinkling of sunflower seeds. Lastly, I shredded up some salmon, and sprinkled it on the salad. I whisked together a little bit of olive oil, balsamic vinegar, and the tangy mustard to make a delicious vinaigrette. 
Super easy to toss together, it is my favorite lunch now, and I feel better that I am including veggies in my diet, and I am getting those needed nutients. I have always been a fan of salads, but I would top them with croutons, and creamy, fatty dressings, cheeses, things that fatten up a salad. I thought to myself, why not make the "goodies" in the salad delicious veggies, and nutritious foods to dress up the salad? So, I believe I have been doing a pretty good job with keeping up on bettering my health and bettering my diet. I am going to create more healthy recipes, and I am eager to share them with my readers. I have a lot of great posts planned for this week, I hope I can get around to them. It is a busy week of appointments, school, and work, so I will try and keep up on blogging.
