Gluten Free Peanut Butter Cookies

This   is   a   recipe from a wonderful blogger, Shelly Culp from Behind Blue Eyes blog. She posted these beautiful cookies on her Instagram a few days ago, and I was intrigued. These cookies are so simple to make, and they become addicting after the first taste. 
I   knew   that   I   wanted to make these cookies this morning, so I went to the store to grab up some of the ingredients. I had most of the ingredients, but I wanted to get a new jar of peanut butter, and I needed some honey anyway. I wanted to make these cookies with the best ingredients, so I purchased local honey from Vancouver, Washington and JIF Natural peanut butter. A small way to make these cookies a little healthier. 
Before   I   began   making the cookies, I was a little wary about how these cookies would turn out. I was worried they would be kind of runny, and they might not bake correctly due to the fact that they have no flour. When I make anything, I am afraid that it won't turn out. The recipes I make most always turn out beautiful, and delicious, so I really have no reason to worry. These cookies turned out perfect,  and the recipe was incredibly easy to follow. There isn't really a way that someone could goof up on this recipe. 

So, here is how to make these amazing cookies. 
Ingredients
- 1cup of peanut butter
- 1/3 cup of honey
- 1/2 cup of baking soda
- 1 teaspoon of vanilla
- 1 egg 
- pinch of salt

First, preheat your oven to 350 degrees and prepare a cookie sheet. Next, put all ingredients listed in order into a medium size bowl. Stir or beat ingredients together until they are well blended. Spoon out the dough onto the cookie sheet, and bake for 8-10 minutes. 
This   recipe   created   two cookie sheets of cookies. The first sheet, my cookies were small and round. On the second sheet, I flattened some of the cookies, and right after I took them out of the oven, I sprinkled some coarse salt on top. It made for a fabulous blend of sweet and savory. 
I   have   a   thing for gluten free recipes, especially if they are simple and sweet. I do not take part in a gluten free diet, but it is sometimes a good idea to go without gluten every once in a while. Since it is such a simple recipe, I think I will share it with my work. I am a server at a retirement home, and some of the residents are gluten free. Unfortunately, we never have gluten free desserts, and I always feel horrible when I have no dessert to offer the gluten free residents. This recipe is simple enough to mass bake for many people and it would be the perfect gluten free dessert!
