Healthy Avocado Dark Chocolate Cookies

A while ago, I was scrolling through Pinterest and saw a recipe for avocado chocolate cookies. I have heard of avocado chocolate muffins before, but never cookies, and avocado with chocolate in cookies? Weird right? But, since I like to promote healthy living, I thought I would give these healthy cookies a try. They are so easy to make, they are gluten free, healthy, and super delicious. They don't require flour or butter, and they bake quickly! Ok, but avocado in a cookie? Try and get past that because you don't taste the avocado at all. These are fantastic cookies, and I hope you give them a try.

Why avocado? Well, the avocado is a substitute for butter and fatty oils that have no business being in a healthy cookie. Avocados are a healthy fat, and they are known to be the happy fruit. If you are feeling depressed, you should have an avocado because they are high in vitamin B6, folic acid, and they stimulate the production of serotonin, which is a chemical that runs low in those that are depressed. Since avocados are the healthy fat, I have used an avocado to replace shortening, butter, and other oils that make other cookies quite unhealthy.

These cookies are so delicious! They are chocolately, fudgy, and (I hate this word) moist. While the cookies are unbelievably yummy, the batter is scrumptious in itself. I had to take a goofy photo of me enjoying the cookie batter. When you make these cookies, do not be alarmed when you mix up a cookie batter and not a dough. Remember, these cookies are flourless, so it will be a batter. You do not need to add extra chocolate powder to it, they are meant to be moist and fudgy.


Ingredients:
-3/4 cup of avocado flesh
-1/2 cup brown sugar
-2 tablespoons of honey
-1 egg
-1/2 cup unsweetened cocoa powder
-1/2 teaspoon baking soda
-1/2 cup of dark chocolate chips
Here's how to make them:
1. Preheat the oven to 350F.
2. Prepare a pan with tin foil or parchment paper.
3. In a medium boil, cream together the brown sugar, honey, and avocado using a hand mixer. You
will have to go over the avocado a few times for it to be creamed completely. It helps if you cut up
the avocado flesh first.
4. After the sugar, honey, and avocado are blended together, add in the egg.
5. Slowly add in the unsweetened baking powder while mixing because it will be messy, dusty, and
you don't want cocoa powder flying everywhere. It is a mess! So, add in the cocoa powder slowly.
6. Add in the baking soda and mix.
7. Add in the chocolate chips and mix.
8. Lick the beaters **Optional**
9. Use two spoons to place the batter on the cookie sheet, and flatten it out a bit in cookie form.
Flattening them is totally optional.
10. Bake for 8-10 minutes, and after baking, let them cool for five minutes.
11. Enjoy!
