Healthy Oatmeal Craisin Breakfast Cookies

This morning, on my way to the beach with my friends, I ate these Healthy Oatmeal Craisin Breakfast Cookies. These cookies are perfect for on-the-go. That is what I needed for this morning, a healthy, on-the-go breakfast that won't make a mess in my car. The answer was simply breakfast cookies.

What is the difference between a breakfast cookie and a dessert cookie? That is easy. Breakfast cookies utilize healthful ingredients, such as oats, fruit, protein powder, dark chocolate, and dessert cookies utilize sugar, flour, and butter. Breakfast cookies are so easy to take along on car rides, and they are jam-packed with health. I am taking a break from protein bars, so I created a healthy breakfast cookie recipe that won't leave you hungry, and that will boost your energy! Did I mention they are also flourless? Oh yes! 
Here is what you need: 

-2 & 1/3 cups of quick oats
-1/2 teaspoon vanilla extract
-1/4 cup of almond butter (optional)
-1/4 cup of protein powder
-1 cup of crunchy peanut butter 
-1/4 cup of honey
-2 ripe mashed bananas
-a sprinkle of salt
-1/3 cup of craisins
-1/3 cup of dark chocolate chips

Here is how to make them: 

1. Preheat the oven to 325F, and prepare a cookie sheet. 
2. In a medium bowl, mix all of the ingredients together (it is better that you go in order of the list.) 
3. Use two spoons, and plop the breakfast cookie dough on the baking sheet (about 2 tablespoons 
    worth for each cookie). 
4. Flatten the cookies slightly so they aren't completely round. 
5. Bake the cookies for 15 minutes, and let cool before serving. 
These cookies are fabulous! They are full of healthful ingredients. You can put many different types of fruits in your breakfast cookies. Your kiddos will love these, and they will love it because it uses the word "cookie." If you have a picky eater, or are in need of a quick breakfast, these can be your answer! 
I am enjoying my trip a lot, and I have to give some of the credit to these cookies, these little energy boosters that are fantastic for a fast breakfast.
