Blueberry Swirl Muffins

I love pretty, colorful food! When I saw these beautiful muffins on Pinterest, I wanted to make them myself! The color is so vivid, and I love when color comes from natural sources like fruit, berries, and veggies. I love not using fake food coloring, and having the flavor of blueberries along with the color. These muffins are so scrumptious, and while the prep process has a lot of steps, it is so worth it because the muffins turned out beautifully, and so tasty!

I love the smell of baked goods on a chilly, Fall day. It is starting to look more like Fall around Portland, so baking yummy treats on a kind of a cold day completes the feeling of Fall. Flannels, baked treats, a cloudy, chilly day is the epitome of Fall.

This recipe from Honestly Yum is honestly yummy. The muffins aren't too sweet, or sour from the blueberries. The prep for the muffins comes in a lot of steps, but those steps are necessary to make these muffins extremely yummy.

Here is what you need for the Blueberry Swirl Muffins:
-2 cups blueberries
-1 cup & 1 teaspoon granulated sugar
-2 & 1/2 cups flour
-2 & 1/2 teaspoons baking powder
-1 teaspoon salt
-2 large eggs
-4 tablespoons of melted butter, cooled.
-1/4 cup vegetable oil
-3/4 cup plain yogurt
-1/4 milk
-1 & 1/2 teaspoons vanilla extract
For the streusel topping
-1 & 1/2 tablespoons granulated sugar
-2/4 cup brown sugar
-pinch of salt
-1/2 cup flour
-softened butter
1. Preheat the oven to 425 degrees Fahrenheit.
2. To make the streusel topping, combine the streusel topping ingredients in a small mixing bowl with a fork, set aside.
3. To make the blueberry swirl mixture, pour one cup of blueberries and 1 teaspoon of granulated sugar into
a small sauce pan. Turn stove onto medium, and mash the blueberries with the back of a spoon. The
mixture should be thick. Let cool to room temperature.
4. In a medium mixing bowl, mix together the flour, salt, and baking powder together with a pastry cutter or
a fork. Set aside.
5. In another medium mixing bowl, whisk together the eggs and remaining cup of sugar.
6. Slowly whisk in the butter and oil into the egg mixture, you can do butter and oil separately.
7. Whisk the yogurt, milk, and vanilla extract in the egg mixture.
8. Make sure all of the ingredients in the egg mixture is blended thoroughly.
9. Slowly fold in the egg mixture into the flour mixture until you have a batter-like substance.
10. Pour in the remaining cup of blueberries and stir.
11. Prepare a muffin sheet by lining the muffin tin with muffin liners.
12. Take a large spoon and spoon the batter into the liners. Make sure the liners are evenly filled with the
batter.
13. Plop about a teaspoon of the blueberry swirl mixture onto the batter in the cupcake liners and use a fork
or a toothpick to swirl the blueberry mixture around in the batter.
14. Sprinkle the streusel topping over the muffins after blueberry swirl mixture is mixed to your liking.
15. Bake in the oven for 17 minutes, then let cool and enjoy!

Aren't they so pretty? Not only are they pretty, but they are tasty too! I received my whole family's approval on these muffins. I love making things that my family can enjoy! Baking is so therapeutic sometimes, and it feels even better when you make something scrumptious that your whole family loves! I will definitely be making these again!
